Green Tea Ice Cream Without an Ice Cream Machine

How can I make green tea ice cream? I don’t have an ice cream maker available to me but I would really love to make it!

Camillia answers:

You’ll have to find some green tea powder. If you can’t find it already ground, buy the best quality green tea you can and run 3 or 4 tablespoons of it through a clean spice or coffee grinder.

When you’ve gotten the powder as fine as you can, add a few tablespoons of very hot water, milk or cream to it and stir until it becomes a green paste. Once cooled, stir the paste into a pint of good quality softened (but not melted) vanilla ice cream.

Once well blended, put the mixture back into the freezer until it’s set enough to serve it. You will probably not get the mint green coloured ice cream you see in the restaurant since a lot of that is artificially coloured. A drop of food colouring will fix that if you want the green colour.

Things You’ll Need:
10 scoops ice cream (green tea ice cream)
1 cup glutinous-rice flour (mochiko)
3/4 cup water
1/4 cup sugar
2 tsp. Vanilla
corn flour, for dusting
glass bowl
mixing spoon
plastic wrap
cutting board
airtight container
Soften the ice cream, scoop into 10 round balls, and refreeze until hard.

Step 2Combine glutinous rice flour and water in a glass bowl. Mix well to paste, then add sugar and vanilla, mix until dissolved.

Step 3Cover with plastic wrap and microwave for 2 minutes. It will be half cooked. Remove and stir well while it’s hot.

Step 4Cover and return to microwave for 30 seconds. Stir well.

Step 5Place plastic wrap over a cutting board. Dust generously with corn flour (this is a must).

Step 6Wait for dough to cool. Place onto board and divide into 10 pieces.

Step 7Flatten dough with your palm. Wrap each piece of dough around an ice cream ball and refreeze in an airtight container.

Can you make green tea ice cream without matcha?

I want to make Green tea Ice cream but the nearest asian market is miles away. Can i substitute ground up green tea? Or any other suggestions?

You can, but will get the best results using green tea powder or matcha.

Here is my favourite Green Tea Ice-cream Recipe

Makes about half a litre


• 1 tbsp green tea powder
• 2/3 cup sugar
• 3 egg yolks
• 3/4 cup milk
• 200ml pure cream


1. Mix the tea powder with two tablespoons of sugar.
2. In a seperate bowl, mix egg yolks with remaining sugar.
3. Pour milk into pan and heat gently. Be careful not to boil it.
4. Remove from heat and mix some of the milk into the green tea mixture.
5. When you have a smooth paste, add it to the remaining milk in the pan.
6. Whisk in the egg yolks and leave to cool.
7. Whip the cream then add to the cold green tea mixture.
8. Freeze
