Looking for a green tea ice cream recipe

If you’ve thought about trying green tea ice cream, but haven’t been able to find it, why not make your own?  That way you can control the quality of the ingredients, and adjust the recipe until it fits your preferences.

To paraphrase the Baby Bear in Goldilocks, your “Ice cream will be just right!”

Try one or all three of the following green tea ice cream recipes and find  your favorite.

#1 Green Tea and Honey Ice Cream


  • 1 cup milk
  • 1 cup half and half
  • 2 teaspoons peppermint leaves (**variations below)
  • 3 green tea bags
  • 3 eggs, separated (3 yolks, 3 whites)
  • ½ cup honey
  • 2 teaspoons grated orange rind (** variations below)
  • 2 cups heavy cream


  1. Heat milk, half and half, and peppermint leaves in the top of a double boiler.
  2. Steep green tea bags in hot milk for 5 minutes
  3. Strain milk mixture to remove bags and peppermint leaves, then put it back in the top of the double boiler.
  4. Beat honey and egg yolks together, blending well.  Add two tablespoons of the hot milk mixture to the honey and egg blend.  Stir well.
  5. Add the honey and egg mixture to the rest of the milk mixture in the top of the double boiler.  Simmer gently over low heat, stirring constantly, until it thickens.  Cool.
  6. Stir in the heavy cream and grated orange rind.
  7. Beat the 3 eggs whites until they are fluffy, then fold them into the tea mixture.
  8. Place completed mixture into ice cream freezer and churn freeze.

**Variations: Instead of peppermint leaves and orange rind, mix it up and use different spices like cinnamon, cardamom, ginger, orange or lemon peel, or nutmeg in whatever combination sounds good to you.

Another way to vary the taste is to use different flavored green teas, and even different flavored honeys.  By varying the spices (peppermint or others), flavor of green teas, and honey, you could have a new flavor sensation every time you make this ice cream if you wanted to!

Besides the taste, one reason to enjoy green tea in ice cream is the health benefits of green tea. The next green tea ice cream is made without sugar, for a healtheir treat.

#2 Green Tea Ice Cream (from “Shake Off the Sugar Cookbook” by Lynn Stephens)


  •  1 cup water
  • 10 bags of green tea, fruit flavored
  • 2 ½ cups heavy cream
  • 1 cup plain soy milk
  • ¼ cup Splenda
  • ¼ cup fructose or agave syrup


  1.  Bring the water to boil in a small saucepan; remove from heat.
  2. Add tea bags.  Cover and steep for about 30 minutes.
  3. Remove green tea bags, squeezing excess fluid from bags into pot.
  4. In large bowl, combine the green tea concentrate with the sweeteners until they are dissolved. 
  5. Add the other ingredients (cream and soy milk).
  6. Freeze according to directions from the manufacturer of your ice cream maker.

Once again, the flavor of this ice cream can be varied by the type of green tea used.  Try your favorite brew of green tea for this green tea ice cream recipe.

This green tea ice cream recipe is also made without sugar, and is also the only one that doesn’t use an ice cream freezer.

#3 Green Tea Vanilla Ice Cream


  • 2 cups skim milk powder
  • 4 cups water
  • 4 green tea bags, any flavor
  • 1 teaspoon vanilla extract
  • ½   cup honey
  • 1 envelope unflavored gelatin
  • ¼ cup water
  • 3 eggs, separated (3 yolks, 3 whites)


  1. Bring water to boil in small saucepan; remove from heat
  2. Add the green teabags.  Steep for about 30 minutes.
  3. Remove teabags.  Measure to be sure there is still 4 cups of fluid.  If not, top off with plain water until you have 4 cups.
  4. Combine the skim milk powder and green tea mixture in the top of a double boiler on stove.  Stir in honey.
  5. While the milk mixture is heating, sprinkle gelatin over the ¼ cup cold water and allow to soak for a few minutes.
  6. Add the gelatin to the hot milk mixture and stir until it dissolves into the mixture.
  7. Beat egg yolks, add a couple tablespoons of the milk mixture to them, then add eggs to the milk mixture.  Blend well.
  8. Cook until the mixture coats the spoon, stirring constantly.
  9. Remove from heat.  Add vanilla extract.  Pour mixture into freezer trays.  Cool completely, then place in freezer.

10.  Ten minutes before serving, remove the ice cream from the freezer and let soften at room temperature.  Scoop into a mixing bowl, add unbeaten egg whites and beat until fluffy.  Serve immediately.

Leftover ice cream can be refrozen.  Before serving, beat once again.
