For white peony tea why is it that it's recommended to pour hot water over the bag in the mug instead of?

boiling water?

Every time I choose boiling water the white peony tea or any other white tea turns dark yet when I chose hot water it turned very light pale golden yellow.

Because teas other than black tea - green tea, white tea, oolong tea - taste much better when you use hot water instead of boiling water. When you pour boiling water on them, a lot of dark, bitter compounds are forced out and the tea tastes nasty. If you use water at the recommended temperature, the bitter compounds don't get into the tea as much and the tea tastes good.
